Canoe Ridge Winery

This is a winery that was established in 1994 and has great impact on the Washington wine business with the high quality that they maintained. Canoe Ridge Vineyard focuses primarily on Merlot, Cabernet Sauvignon and Chardonnay. The estate vineyard in the Horse Heaven Hills and was first planted in 1989, followed by the opening of its Walla Walla winery, established in 1994. The name comes from the vineyard site on the eastern side of Washington adjacent to the Columbia River. Famed explorers Lewis & Clark named this crest of land; they thought the ridge looked like an overturned canoe. In its two decades of wine-making, Canoe Ridge Vineyard has earned more than twenty-five scores of 90 points or better. This is in of its self is a great achievement with the many good wineries which are in the Columbia valley. After talking with Heidi Witherspoon from the winery uses the name expedition on the label relating to the Lewis and Clark Trail expedition coming to the west. Take the time and visit the winery you will be amazed with the winery tasting room that had originally served as the town’s streetcar and train facility in the early 1900s.

Freestone Wines

When the legendary Joe Phelps and his son Bill founded Freestone Vineyards & Winery, they discovered a new kind of gold on the slopes of western Sonoma County. They planted Pinot Noir and Chardonnay in three distinct properties—Pastorale Vineyard, Quarter Moon Vineyard, and Ferguson Vineyard—in the historic town of Freestone, on the fringe of the Russian River Valley. They planted the first vines in 2000 with phased replanting occurring through the next seven years as they learned more about the land. The principles of Biodynamic farming are applied to maintain, preserve, and enhance the natural vineyard environment. Sustainable farming practices such as composting, recycling nutrients, irrigation, and the use of cover crops contribute to the cultivation and preservation of the soil. The grapes are picked carefully and sorted by hand to ensure their freshest and purest expression. What I found was is that the best practices of the Joseph Phelps brand has been established in this winery’s products.

These wines from Freestone Vineyards are for the most part only available in restaurants. The Chardonnay 2010 Fogdog Chardonnay boasts an abundance of flintiness and aromas of apple, pear, and citrus. This wine is full-bodied, with elegance and restrained, with  good  acidity and minerality that is balanced by warm flavors of pear.

This 2011 Pinot Noir is a well-balanced full of fruit with bold aromas of cranberry, red raspberry and even a slight rose. Laurie the wine maker, was careful to retain the individual expressions of each of the vineyards in the blend by keeping each lot separate throughout fermentation and aging. They have a goal each year to make a consistant tasting wine for your purchase. It is not always that simple, however Laurie seems to make it easy for our enjoyment. This has become tradition for Beringer Cabernets, and allows Laurie to blend from a broad array of aromatic, flavor and structural components at blending time. The 2009 growing season was marked by a mild season overall, there was a struggle to get the sugars. Light spring rains gave way to a serene, warm summer. Temperatures stayed even through August, which gave the grapes a great soft and gentle time to develop good acid and fruit character. Yields were on the smaller side, for most wineries in the Napa valley, making for intense varietal characteristics, flavor and base fruit for great wine development. For the 2009 blend, the largest portion of the blend came from St. Helena Home vineyard which was purchased in the 1800’s by Beringer Brothers. A portion also comes from Bancroft Ranch and Steinhauer vineyards located on Howell Mountain, creating a blend from the top and the bottom of the valley.

CHICKEN ALMOND TURNOVERS

Serve these baked turnovers warm or cold.

1 tbsp. Butter or margarine                            1/8 tsp. Salt
¼ cup chopped onion                                      1 tbsp. Finely chopped blanched almonds
1 garlic clove, minced                                      ¼ tsp. Curry powder   
1/2chicken breast, boned, chopped                  4 tomatoes, seeded chopped
1/8 tsp. Dried basil leaves crumbled

 In medium skillet, melt butter or margarine; add onion, garlic, and chicken.  Cook and stir over medium heat about 5 minutes.  Stir in tomatoes, curry powder, basil and salt.  Simmer over medium heat until flavors blend, about 5 minutes.  Stir in almonds; set aside to cool slightly.  Preheat oven to 400F. Use  Prepare pastry dough; cut the 5 X 5 squares in half corner to corner. Place in center of the ½ about 1 tablespoon of the mixture. Press edges with tines of a fork to seal, poke the top to vent. Paint with egg wash.  Arrange on an greased  baking sheet   Bake about 15 minutes in preheated oven until browned.  Makes 20 to 22 appetizer servings. Can be made ahead and frozen, let completely thaw and bake.

                                   Above-average rainfall in the California led to a slow start going into the2011 growing season. However, springtime growth was only slightly behind like most western states. Continuing into summer and fall, mild weather resulted in smaller-than-normal cluster weights and below-average yields,
making the fruit flavors more concentrated and intense.Rich and elegant, our Woodbridge Chardonnay displays notes of delicious tart green apples and a gentle floral undertone. Nuances of apple pie with autumn spices weave through the fruity aromas and flavors, ending in a light, creamy oak finish. This is a great wine for the spring time evenings.

What is the result of the 2012 Year and special wine prices.

2010 Del Rio Winery Pinot Noir

The fruit for this wine is 100% Pinot Noir according to the winery. The winery is located in the Rogue Valley in southern Oregon. For most of the state of Oregon the 2010 growing season was slow to mature the fruit and the fruit and in some cases for many wineries was harvested into November. There was also another challenge to all the winemakers in Oregon because of lack of the sun the fruit stays longer on the vines, and in some cases the sugar levels are lower. What this winery did was make a great bottle of wine. I would recommend you try this wine. The wine itself has a bright ruby color and an intense aroma of cherry, with the kicker of a hint of dry rosemary and that yummy vanilla. With this round and fruity wine in your mouth you will be enriched with an experience that will be on e to remember. According to the winery there was some new oak barrels used in the ageing and that last 10 to 11 months.

The Menus and Prices you were looking for !

Chicken Fajitas mix for 18 servings

5 GREEN PEPPERS                   2 RED PEPPERS (double sliced)
4 ONION (moon sliced)            2 Tablespoons Lime Juice
2 minced garlic clove              2 tsp. taco seasoning
2 tsp. chili peppers ( seed )     1/4 tsp. Tabasco
3 Lbs. Chicken ( torn apart )    18 tortillas
1 cup olive oil                        1 Teaspoon Cumin

Start by cooking 3 pounds of chicken meat until done. Slice peppers and onions and steam in pot ( 5 min ) with 1 cup water add pre-cooked chicken and the drippings
and let all steam 4 min., while steaming make the marinade. The mix  is the Lime Juice, minced garlic clove, olive oil, Cumin, taco seasoning, tabasco and chili peppers seed cook for 5 more minutes, then add chicken to fajitas mix and serve.

TROPICAL WALNUT-CHICKEN SALAD

¾ cup Olive                                                   1/2-cup raspberry vinegar  
1 ½ Tablespoon Dijon mustard                      1 Teaspoon Dried rubbed sage
1-½ gallons mixed salad greens                     2 Papaya’s peeled, seeded and chunked
2 Mango’s, peeled, pitted and chunked          1 lb Fresh raspberries
3 Ripe Avocados chunked                              1-½ cups walnuts chopped
4 Lbs. Chicken breasts cooked cut into pieces

 Whisk olive oil, vinegar, mustard and sage to blend in medium mixing bowl.  Combine chicken, salad greens, papaya, mango, and raspberries in large bow.  Add dressing and toss well.  Divide mixture into 12 portions.  Arrange avocado slices on top, sprinkle with walnuts and serve.

A bold and dark Pinot that is full of fruit and slightly shaded with oak overtones. You will be fooled thinking that there is a sweet character but established great pinot flavors. The mouth fills with fruit character of the pinot noir showing cherries and soft spice to the flavors.
