2010 Ironstone Cabernet Franc
This wine is a great example of what can be done with the Cabernet Franc. The Cabernet Franc is a grape that is used widely in France in blending the Cabernet Sauvignon in the Bordeaux region. The noise on this wine will open you right up. It shows rich vanilla overtones with some berry character. When you first taste this wine you will have cherries and raspberries. The wine is 100% Cabernet Franc and has been aged in Oak for 12 months. What they also did was some ageing was in American Oak and some in French Oak. They like to be known for their efforts to grow their wines with sustainable growing practices. This is well worth the deviation from the normal red wine for something special and different.

GARLIC ROAST CHICKEN
Chicken, 3 to 3 ½ lbs. 2 Tablespoon minced Garlic
5 small potatoes, scrubbed cut thick ½ inch Sea Salt and pepper to taste
2-½ Tablespoons lemon juice ¾ Cup white wine
Parsley sprigs ½ Cup Olive Oil
Cut your chicken into pieces or buy chicken cut into pieces. Put chicken into baking pan skin up. Bake at 400 F. for 10 minutes. During the baking time mix together the olive oil and minced garlic. Take the chicken out of the pan and layer the sliced potatoes in the bottom of the pan. Set chicken, skin side up, on top of the potatoes. Rub the chicken pieces with the olive oil mixture, use all. Sprinkle lightly with salt and pepper and lemon juice. Bake at 400 F. for about 45 minutes. Pull from the oven and pour the white wine over the chicken and bake for 15 minutes or until done.
Arrange chicken and potatoes on a platter and garnish with parsley.
